Chef Niko Romito represents the excellence of Italian cuisine, which thanks to his liaison with Bulgari Hotels since 2017 has been able to export all over the world. As he himself says ‘true taste is an absolute value, and as such it can speak to everyone: the challenge is to distill it, export it and ensure that the whole world learns to recognize it’.

And with great success given that the Michelin star was reconfirmed for the Bulgari Hotel in Beijing in the 2023 Guide, the year in which the new Bulgari Hotel in Rome will see the light, a Luxury Hotel in the historic center with numerous suites and large spaces for events.

However, the heart of Niko Romito’s cuisine is the Reale restaurant in Castel di Sangro, in the Abruzzo hinterland, where his idea of a ‘simple’ cuisine, as a result of a tireless research on its ingredients, is brought to the maximum expression.

Reale is located in Casadonna, a 16th-century former monastery, restored according to the essential but refined aesthetic taste of Niko Romito and the architect Leonardo De Carlo. Together with his inseparable sister, Cristiana Romito, GM of Casadonna, they gave life to 3 elegant suites and 6 deluxe and classic rooms furnished with design elements and built with basic materials: reclaimed wood, iron, Majella stone, old ceramic tiles, linen, felt. An essentiality that can also be found in the Chef’s dishes.

The Niko Romito Academy inside Casadonna is another of his creations, a training school but also a research and experimentation center for future class chefs, where new ideas are shared and where practice is combined with theoretical lessons on products and their processing, to build the kitchen to come and never stop.

In the three-starred Reale stands out a new vegetable proposal awarded as the best by Gambero Rosso, whose tasting menu enhances the purity, taste and intensity of its vegetable raw materials
